Beauty and the Beet

The darker the fruit or vegetable the more nutritious it is for you and nothing is more dense or dark than beets.  Surprisingly, beet stalks are equally nutritious as the beet itself and provides a different array of nutrition.  A cup of beet stalks provides 60% the RDA of vitamin C (which helps repair tissue) 220% the RDA of vitamin A (superb for the immune system and vision) 8 grams of perfect carbs and 4 grams of protein!  The beet itself is loaded with betaine (which prevents heart attack) loaded with folates (imperative for DNA synthesis within cells) and 325 mg of potassium.  The easiest way to get your beets down is to blend them.  I load our shakes up with them.  Eat your beets!
